Aunt Micki's Salsa

Here's a different twist to your canned salsa!  

.Carrots & celery.

It's also a really easy recipe because all the produce is 5...5.5.5.5.5.  5 of this, 5 of that...

AUNT MICKI'S SALSA
5 to 5 1/2 qts tomatoes, peeled & chopped
5 carrots, finely chopped
5 green peppers, finely chopped
5 stalks of celery, finely chopped
5 onions, finely chopped
5-7 jalapenos, finely chopped
5 garlic cloves, minced
3/4 c. sugar
1/4 c. salt
1 1/2 c. apple cider vinegar 
1/2 c. white vinegar
1 T. chili powder
1/2 T. pepper
2 T. cumin
tomato paste, optional

Cook tomatoes with garlic for 2 hours.  Add remaining ingredients & cook for 1 more hour.  You can then add tomato paste to thicken to your likeness!  Place into pint jars & process in canner/hot water bath for 10 minutes. 

Yields 10-12 pints.

This is a family recipe!  It's my husband's Aunt Micki's.  
My mother in law makes it all the time.  
They eat a lot of salsa, especially when the kids 
all stop by after church for a snack. 
Good ol', trusty chips and salsa! 
Always good to have on hand!

Garden Fresh Canned Salsa

This recipe has just the right combination of spices, peppers, tomatoes and paste/sauce to make it the perfect consistency & flavor!

{I Think I Can}:  Garden Fresh Canned Salsa

add the spices

GARDEN FRESH CANNED SALSA
18 c. skinned/chopped Roma tomatoes
5-24 jalapenos, chopped
2-5 large onions, chopped
2-3 green peppers, chopped
5 large garlic cloves, minced
3 1/2 Tbs. salt
1/2 Tbs. cilantro
2 1/2 tsp. cumin
1 1/2 c. vinegar
1 (24oz) can tomato sauce
1 (24 oz) can tomato paste
1 c. sugar (optional)
1 tsp. chili powder

Place all ingredients into an 8 qt pot & bring to a slow boil.  Simmer 1-2 hours or until mixture is the desired consistency, stirring occasionally.  Place into pint jars.  Process in water bath for 20 minutes.  Yields about 10 pints.

Sweet Pickle Relish

I needed to use up the LAST of my cucumbers 
before they went bad/worse.  
So I decided to make me some pickle relish!

{I Think I Can}:  Sweet Pickle Relish

SWEET PICKLE RELISH
6 quarts ground/chopped cucumber
12 medium onions, chopped
4 green peppers, chopped
2 red peppers, chopped
1 1/2 qts white vinegar
9 c. sugar
1 TBS mustard seed
1 TBS celery seed
1 TBS turmeric

Mix cucumbers, onions, and peppers together & sprinkle with 2 good handfuls of salt over top, stir.  Let stand 3 hours.  Add enough water to cover.  Let stand 10 minutes & then drain well.  Bring to boil the vinegar, sugar, mustard seed, celery seed & turmeric.  Then add the cucumber mixture & return to a boil.  Can pints in hot water bath for 15 minutes.  Makes 12 pints.
