Canned V8~Tomato Juice

{I Think I Can} Canned V8-Tomato Juice

Yes folks! 

I'm STILL harvesting tomatoes...
They just keep comin' and comin'...
"the pot that won't run dry..."

I keep waiting for my husband to pull my plants, 
but until that happens I hate to see them go to waste, 
so I keep coming up with things to do with them :)  
Hopefully they'll be out soon, 
as I'm starting to run low on IDEAS!

Now How is This for BEAUTIFUL:

{I Think I Can} V-8 Tomato Juice

 I just LOVE it's RICH DEEP RED color!
You know what makes it that color?
.BEETS.
NOW, now--DON'T get turned off quite yet!
I. Don't. Like. Beets. Either.
-For Real-
But you can NOT taste them, it just really 
adds a beautiful color to the finished product!
Plus I'm sure some added 
vitamins & minerals-whatever beets provide!
So, just give it a chance :)

Alrighty: now for the recipe...
V-8/ TOMATO JUICE
You will need:
-1/2 bushel of tomatoes, washed & halved or quartered (or 26#, or 2 gallons already juiced tomatoes)
-1 bunch celery, cut into chunks
-1 bunch carrots, ends removed, and chunked
-leftover veggies from your garden, or go buy some if you want.
(I used:)
-4-5 peppers (all colors), seeded and chunked
-several onions, in large chunks
-several garlic cloves, minced
-handful of beets, peeled and chunked
Now this is what you do:

Throw all the veggies (except the beets) into a big pot.  
Add some water to help get the steaming going.  
You want the veggies to cook down to pretty mushy.  

Place a lid on the pot.

Place the beets into a separate pot along with a little water, and cook them until pretty tender. 
--watch so the water doesn't all boil out and it starts to burn on, 
not speakin' from experience or anything :) --

In another pot, cook the tomatoes down. 
(leave the skins on)  
Add a little water if you need to.

Then run them through the squeezo, saving the juice!

Now once the beets are all done cooking, 
add them-juice and all, to the blender & puree.

Do the same with the other veggies.

Then mix the two purees together.
Isn't that soooo pretty?

Once the tomato juice is ready.  
Place all ingredients into one big bowl & stir it up good.

Now all you have left to do is hot water bath them.  
Pints & quarts both take 35 minutes.

Mine made 6 quarts & 19 pints w/ a tad left over.

Uses:  in any recipe that calls for tomato juice or V-8 juice, such as chili, casseroles, stews, soups, 
meats in the crock pot...
You can also drink it like V-8 juice if you are that type of person.  I don't particularly enjoy that sort of a thing myself.  But I know lots of people do!

Aunt Micki's Salsa

Here's a different twist to your canned salsa!  

.Carrots & celery.

It's also a really easy recipe because all the produce is 5...5.5.5.5.5.  5 of this, 5 of that...

Now that's easy to remember!

AUNT MICKI'S SALSA
5 to 5 1/2 qts tomatoes, peeled & chopped
5 carrots, finely chopped
5 green peppers, finely chopped
5 stalks of celery, finely chopped
5 onions, finely chopped
5-7 jalapenos, finely chopped
5 garlic cloves, minced
3/4 c. sugar
1/4 c. salt
1 1/2 c. apple cider vinegar 
1/2 c. white vinegar
1 T. chili powder
1/2 T. pepper
2 T. cumin
tomato paste, optional

Cook tomatoes with garlic for 2 hours.  Add remaining ingredients & cook for 1 more hour.  You can then add tomato paste to thicken to your likeness!  Place into pint jars & process in canner/hot water bath for 10 minutes. 

Yields 10-12 pints.

This is a family recipe!  It's my husband's Aunt Micki's.  
My mother in law makes it all the time.  
They eat a lot of salsa, especially when the kids 
all stop by after church for a snack. 
Good ol', trusty chips and salsa! 
Always good to have on hand!

Garden Fresh Canned Salsa

This recipe has just the right combination of spices, peppers, tomatoes and paste/sauce to make it the perfect consistency & flavor!

{I Think I Can}:  Garden Fresh Canned Salsa

dump in all the veggies

add the spices

GARDEN FRESH CANNED SALSA
18 c. skinned/chopped Roma tomatoes
5-24 jalapenos, chopped
2-5 large onions, chopped
2-3 green peppers, chopped
5 large garlic cloves, minced
3 1/2 Tbs. salt
1/2 Tbs. cilantro
2 1/2 tsp. cumin
1 1/2 c. vinegar
1 (24oz) can tomato sauce
1 (24 oz) can tomato paste
1 c. sugar (optional)
1 tsp. chili powder

Place all ingredients into an 8 qt pot & bring to a slow boil.  Simmer 1-2 hours or until mixture is the desired consistency, stirring occasionally.  Place into pint jars.  Process in water bath for 20 minutes.  Yields about 10 pints.

Sweet Pickle Relish

I needed to use up the LAST of my cucumbers 
before they went bad/worse.  
So I decided to make me some pickle relish!

{I Think I Can}:  Sweet Pickle Relish

SWEET PICKLE RELISH
6 quarts ground/chopped cucumber
12 medium onions, chopped
4 green peppers, chopped
2 red peppers, chopped
1 1/2 qts white vinegar
9 c. sugar
1 TBS mustard seed
1 TBS celery seed
1 TBS turmeric

Mix cucumbers, onions, and peppers together & sprinkle with 2 good handfuls of salt over top, stir.  Let stand 3 hours.  Add enough water to cover.  Let stand 10 minutes & then drain well.  Bring to boil the vinegar, sugar, mustard seed, celery seed & turmeric.  Then add the cucumber mixture & return to a boil.  Can pints in hot water bath for 15 minutes.  Makes 12 pints.

Pasta Sauce

I like some chunks in my pasta sauce, & I like it thick.  
So this recipe was perfect for me!  
I plan to use it for pizza & spaghetti sauce.


{I Think I Can}:  Canned Pasta Sauce
I made mine be 2 quarts & 4 pints--also the one with the ring still on, didn't seal!?  So it's in my fridge, waiting to be used up in the next week or two.

PASTA SAUCE
4 med. onions, chopped fine
3 small garlic cloves, minced
3 T. vegetable oil
4 qts tomatoes, peeled* and quartered (I used Roma & Salsa)
4 cans (6 oz each) tomato paste
1 can (16 oz) chopped mushrooms (optional)
1 c. chopped parsley (dry)
3 T. sugar
3 T. salt
4 t. oregano leaves
2 bay leaves

Cook onions, garlic & oil in a large stockpot until tender.  Add the rest of the ingredients.  Mix well and simmer, uncovered, for 2 hours, stirring often.  Remove bay leaves.  Put into jars.  Top w/ readied lid & ring.  Place in canner & boil for 10 minutes.  Makes 4 quarts.

The first lesson I learned was when it calls for 4 qts of tomatoes, that means AFTER you've skinned & chunked them.  I thought I was going to have enough for 1.5 batches (I had 6 qts).  When I got done skinning & chunking them, I only had 10 cups...I still needed 6 more cups to even make ONE batch!  

So I learned from my momma, that it was ok to put them in a freezer bag & take them out when you have enough ripe ones to make a whole batch!  And that worked out just fine!!  I was worried about it being more runny, but it wasn't.

I also couldn't find one bay leaf.  I fished and fished.  So I'll have to try & remember that when I'm cooking with the sauce!  Oh boy.  

*How to peel tomatoes:

  • fill a saucepan 1/2-3/4 full of water
  • bring to boil
  • place about 6 tomatoes in water at once, and let rest just a few seconds (like 30 or less)
  • remove from boiling water
  • keep burner on high because it'll start to cool as you add more cold tomatoes
  • continue until you've done them all
  • now take a knife and make a little slit, and the skin should just peel right off!
Most of my Roma tomatoes were pretty small so I only halved them, not quartered.

You'll be glad you made homemade Pasta Sauce to ENJOY all year round!

Refrigerator Dill Pickles

Anyone else have cucumbers coming out their ears?

Well here is one thing I did with mine this year.  I made pickles that you don't even have to can or pressure cook!

One thing about these, is they are not very strong dill flavored, and they are a little sweet, but not as sweet as bread and butter!

REFRIGERATOR DILL PICKLES
3 qts sliced cucumbers
1 lrg onion, thinly sliced
3 heads of dill*

Place the dill head in bottom of 3 qt jars (or any size containers=3 qts).  Layer cucumbers & onions in several layers until jars are full.  

Boil for 1 minute:
2 c. sugar
2 c. white vinegar
2 c. water
1/4 c. salt

Pour into jars.  Cover & refrigerate.  After 3 days, then ENJOY!  They keep in the fridge for up to a year!

To slice my cucumbers and onions, I used my salad shooter. Worked amazing!  You can also use a food processor too.  Or slice them all by hand.

*I had to do some research on that stuff.  This is what I found out:
  • fresh dill head is the best
  • dill seed can be used as a replacement &
  • 2-3 T. dill seeds=4-6 heads of dill
  • dill weed is not what you want to use
  • see below picture of the bunch of dill I bought

  • Dill weed is the more feathery dark green stuff on the stems-which you don't use in this recipe, but I used fresh dill weed in a few recipes since I had so much of it!  Fresh is always better.
    • When I bought the bunch of dill, it was such a big clump, & I only need 3 of those yellow heads-good thing it only cost me $1.99!  
      • Since I don't like anything to go to waste I may dry the dill weed, to have in my pantry of spices for the winter! 
  • Anyways, that's about all I know about dill

Vegetable Soup in the Pressure Cooker

I got this delicious recipe from my sister in law T. Anne a few years ago, but had not used it yet.  This is our first year to have a garden, so I didn't just have a bunch of veggies laying around like I did this year.  As I thought HOW can I use all these veggies and not let them go to waste, I remembered this recipe! 

VEGETABLE SOUP
2 qt potatoes, diced (I left skins on) 
3 qts water
2 qt tomato juice
2 qt green beans
1 qt cut corn (I used up some from the freezer from last year)
2 qt diced carrots
2 c. celery, diced
1 c. chopped onion
1/2 bulb garlic  (OR approx. 5 cloves, OR 2 1/2 t. of minced garlic)
1/2 T. pepper

Boil for 15 min.  Then I added a 2.5-3 c. diced zucchini.  Put into qt jars.  Put a 1/2 t. salt per qt.  Process 55 min. @ 10 lbs pressure. (DON'T forget to set the timer!)  I forgot for the second batch.  I made a loud AArggh sound when I realized it, and Ryleigh (14 months) goes ggrrr.  Ooops, she's really starting to copy off of us!

This made 9 quarts with maybe a 1/4 c. leftover.  (which worked out good for a taste test :) even though it was too late to realize that 1 T. of pepper was too much for my liking, so I made recipe now to say 1/2 T.)

Here's the first batch that came out of the pressure cooker...They all sealed!


It's crazy when I look at the 9 jars sitting there, how many hours of work it was & it doesn't seem like very much stuff...but it will REALLY make handy dinners in a dash this fall/winter.  Just add some ground beef, or left over pot roast, rice, or noodles, barley, &/or more tomato juice-be creative!
